Reaper and pineapple hot sauce

Carolina Reaper is one of the hottest chillies in the world, so this sauce is for serious heat lovers only. Pineapple, lime and a little honey give it a fruity sweetness up front before the heat builds. Use it a drop at a time.

Wear gloves and eye protection when you handle Reapers, open a window, and keep children and pets well away from the kitchen while you cook. Wash everything thoroughly afterwards.

Ingredients

  • 3 to 5 ripe Carolina Reapers, stems removed
  • 300 g fresh pineapple, chopped
  • ½ onion, chopped
  • 2 cloves garlic
  • 200 ml apple cider vinegar
  • Juice of 1 lime
  • 1 tbsp honey
  • 1 tsp salt

Method

  1. Step 1

    Prepare

    Open a window before you start. Wearing gloves, roughly chop the Reapers.

  2. Step 2

    Simmer

    Put the Reapers, pineapple, onion, garlic, vinegar, honey and salt in a small saucepan. Bring to the boil, then simmer for 15 minutes, until the onion is soft.

  3. Step 3

    Blend

    Cool completely, then blend until smooth. Don't open the blender near your face.

  4. Step 4

    Finish

    Stir in the lime juice and add more salt or honey to taste. Taste from the tip of a teaspoon only.

  5. Step 5

    Bottle

    Pour into sterilised bottles, label clearly, and keep in the fridge for up to 2 months.
