The Carolina Reaper: The World's Hottest Chilli Pepper

The Carolina Reaper is a type of chilli pepper that's famous for its extreme spiciness. This chilli pepper is native to South Carolina in the United States and was created through cross-breeding by Ed Currie of the PuckerButt Pepper Company. The Carolina Reaper has earned a spot in the Guinness World Records as the world's hottest chilli pepper, with a Scoville Heat Unit (SHU) rating of 1.8 million to 2.2 million.

Cultivation

To grow Carolina Reaper plants, start by selecting a warm, sunny location with well-drained soil. The plant can grow to an average height of 60-90cm and has a spreading habit. It produces large, dark green leaves and a high yield of 5-7cm long pods that start green and mature to a bright red colour. Maintaining a soil pH between 6.0 and 7.0 and adding organic matter can improve soil fertility. It's important to water the plant regularly but not to over-water, which can lead to root rot.

Growing

Growing Carolina Reaper plants can take some patience as they are slow-growing, but with proper care, they can be highly productive. Plant the seeds in spring or early summer and expect a harvest in late summer or early autumn.

Harvesting

When the pods are mature and turn bright red, it's time to harvest them. The pods of the Carolina Reaper are incredibly spicy due to the presence of capsaicin, which is responsible for the spiciness of chilli peppers. To use the pods, handle them with care, wear gloves, and wash your hands thoroughly after handling them. These pods can be dried, frozen, or processed into sauces and powders. They are ideal for adding intense heat and flavour to dishes such as curries, salsas, and hot sauces.

Heat Levels

The Carolina Reaper is the world's hottest chilli pepper, with a Scoville Heat Unit (SHU) rating of 1.8 million to 2.2 million. To put that into perspective, a jalapeño pepper has an SHU rating of 2,500 to 8,000. This extreme heat level means that the Carolina Reaper is not recommended for those with a low tolerance for spicy foods.

Pests and Diseases

While the Carolina Reaper is moderately resistant to pests and diseases, it can still be affected by aphids, whiteflies, and spider mites. To keep the plant healthy, maintain a clean area around it, and promptly remove any affected leaves. Additionally, using a neem oil spray can help to keep pests under control.

Dishes

If you're brave enough to try the Carolina Reaper, you can incorporate it into a wide range of dishes. For example, add chopped fresh or dried pods to a marinade for meat, fish, or tofu. You can also use the pods to create hot sauces, spice rubs, and dips. Just remember to use them sparingly and gradually increase the heat level until you find the right balance for your taste buds.
