Serrano guacamole

Good guacamole needs only a few things: ripe avocado, lime, onion, coriander, salt and fresh green chilli. Serrano has a bright, crisp heat that suits it perfectly. Keep it chunky and make it just before serving.

Serranos are usually picked green, but they're just as good red. Chop them very finely so the heat spreads evenly through the guacamole.

Ingredients

  • 3 ripe avocados
  • ¼ white onion, very finely chopped
  • 1 to 2 serrano chillies, very finely chopped
  • 3 tbsp chopped coriander
  • Juice of 1 lime
  • ½ tsp flaky sea salt

Method

  1. Step 1

    Mash base

    Mash the onion, chilli, half the coriander and the salt together in a bowl with a fork to release their flavour.

  2. Step 2

    Add avocado

    Halve the avocados, scoop in the flesh and mash roughly, keeping some chunks.

  3. Step 3

    Season

    Stir in the lime juice and the rest of the coriander, taste and add more salt, lime or chilli. Serve straight away.
