Mango and aji salsa
Baccatum chillies like Aji Fantasy and Bishop's Crown have a fruity flavour and moderate heat, which makes them ideal for fruit salsas. This one is bright and juicy, and goes well with fish tacos, barbecued chicken or pork.
Aji Fantasy ripens to a creamy yellow and Bishop's Crown to red, so using both gives a salsa with lots of colour. Any aji will do if you only grow one.

Ingredients
- 2 ripe mangoes, diced
- ½ red onion, finely diced
- 2 aji chillies, such as Aji Fantasy or Bishop's Crown, finely chopped
- ½ red capsicum, diced
- A handful of coriander, chopped
- Juice of 2 limes
- ½ tsp flaky sea salt

Step 1
Chop
Dice the mango, onion, chillies and capsicum as evenly as you can.

Mix
Combine in a bowl with the coriander, lime juice and salt.

Rest
Leave for 10 minutes, then taste and add more chilli or lime if needed. Best eaten the same day.
