Fatalii citrus hot sauce

Fatalii is prized for its citrusy flavour and serious heat. This sauce plays that up with lemon and a little orange, with carrot for body and colour. It's very hot, so use it a few drops at a time on fish, chicken, tacos and eggs.

Any yellow chinense chilli works here. Devil's Tongue is a good alternative. Wear gloves when handling them.

Ingredients

  • 8 to 10 Fatalii or Devil's Tongue chillies, stems removed
  • 1 carrot, peeled and chopped
  • ½ onion, chopped
  • 3 cloves garlic
  • 150 ml white vinegar
  • 100 ml water
  • Zest and juice of 1 lemon
  • Juice of ½ orange
  • 1 tsp salt
  • 1 tsp sugar

Method

  1. Step 1

    Simmer

    Put the carrot, onion, garlic, vinegar and water in a pan and simmer for 10 minutes until the carrot is soft.

  2. Step 2

    Add chillies

    Add the chillies and simmer for 3 more minutes. Keep your face away from the steam.

  3. Step 3

    Blend

    Cool slightly, then blend with the lemon zest and juice, orange juice, salt and sugar until very smooth.

  4. Step 4

    Bottle

    Pour into sterilised bottles while hot and seal. Keep in the fridge once opened and use within 3 months.
